If you get hold of a good dictionary (online or old fashioned-try Oxford Dictionary online) you will find the meanings of the words and their etymology (where they come from). For example hydro is water (think of other places you have heard them before e.g. hydro electric) and phobia is fear so they are the roots and the meaning is a fear of water. Some of them are a bit trickier, but what you need to do is try to find a smaller word that you recognize within the word and that is the root e.g. Evaporate comes from vapour.
